In 1989 Peter Hawley, the General Manager of the Grand at the time was given £400,000 to establish another restaurant, this was prompted by a warning from the AA that the hotel might lose it’s five-star status if it could not offer guests the choice of two restaurants!. The task was on to create what we have come to know and love after 25 years!
The first job was to transform 4 bedrooms on the East Wing into the Mirabelle, build a completely new kitchen to service the restaurant and provide a relaxed and inviting lounge for pre and after meal drinks and conversation. This all being underway the next task was to find the all important Head Chef. After quite a few visits in disguise, Peter found just who he was looking for, Chef Keith Mitchell was appointed to open the Mirabelle with his experienced background of London and more provincial restaurants, coupled with his active work with the GB Olympic Chef Team this proved to be an excellent choice.
Chef Mitchell went on to become Executive Head Chef for the hotel and is still cooking away today from the Garden Restaurant and providing meals for hundreds of guests attending various functions.
For the past 10 years Chef Gerald Roser has lead the team with great aplomb! Gerald was born and brought up in Austria and got his love of cooking from his mum! Before coming to the Mirabelle he ran a hugely successful restaurant of his own in Hastings and has also been Chairman of the Master Chefs of Great Britain, so is no stranger to high end culinary skills. He has made his legendary Pike Souffle his signature dish and always uses as much local, fresh produce in his cooking as he can.
Since opening the Mirabelle has been a constant entry in the Good Food Guide and this year was awarded the accolade of the ‘Highest rated Restaurant in East Sussex’.
So its not surprising we are so proud of the Mirabelle and we believe it provides the perfect setting for some unforgettable meals.
